Sustainable Table Recipes: Protein Nut Spread

Description:
A heart-smart spread packed with protein and low in sugar that’s great with apples or bananas. Chocolate and vanilla variations can be found in the book.

Ingredients:
¾ cup boiling, filtered water
¾ cup unsweetened, salt-free, roasted almond or cashew butter, thoroughly mixed.
5 (1 ounce) scoops unsweetened vanilla egg white protein or 1 ½ cups dried, powdered egg whites
2 teaspoons pure vanilla extract in a nonalcoholic base or 1 teaspoon vanilla in alcohol.
½ cup cool or cold filtered water, additional ¼ cup as needed.
½ teaspoon stevia extract powder or 10-12 drops stevia extract liquid
1 to 2 tablespoons honey or agave nectar (if using unsweetened protein powder)

Directions:
1. Mix hot water and nut butter in a 2-quart bowl or food processor until smooth and creamy. Add remaining ingredients and blend until smooth, scraping bottom and sides of container.

2. Add ½ cup cool water. If too stiff to blend, add 2 to 4 additional tablespoons water. Taste and adjust sweetness if desired, adding 1/16 to ⅛ teaspoon stevia extract powder, 3 to 6 drops stevia extract liquid, or 1 to 2 teaspoons honey or agave nectar at a time.

3. Scrape into a wide-mouthed jar or smaller containers. Cover and refrigerate for at least 3 hours, or until thick, before serving.

Tips:
Use within 2 weeks.
