Recipe by: Laina Lamb, Ohio Courtesy of Sustainable Table ® Description: A great fresh salad recipe that everyone raves about. It is very easy. Ingredients: 2 bags organic prewashed baby spinach
2-4 kiwis, peeled and cubed
1 pint organic raspberries, rinsed gently
½ to 1 cup chopped walnuts
¼ cup diced red onion (optional)
Directions: Toss with any raspberry vinaigrette that you like, there are some very good organic ones on the market, or make your own.
This makes a great side dish for any outdoor get together.
