Sustainable Table Recipes: Tin Foil Burgers (Burgers en Papillote)

Ingredients:
¼ - ½ pound ground beef per person (or portobello mushrooms)
1 Tbs goat cheese per person
Onion, tomato, mustard (or other favorite burger toppings)
Bread or buns for finished burger

Special Equipment:
Tin foil
Found stick

Directions:
Get a fire going nice and hot.

Lay a 1 x 1 foot piece of tin foil out. Form individual portion of ground beef into a ball. Make an indent with your thumb and add goat cheese. Cover the hole by moving ground beef from the side over the hole and squash the circle a little to form a patty. Set on center of tin foil. (Alternately, with mushroom, just spread the cheese on top).

Top patty with favorite burger toppings (onion, tomato, mustard, etc).

Wrap the top and bottom ends of the tin foil over the patty. Roll the edges and secure at top to form a basket-like shape that is secure. Nuzzle basket into the fire using the stick under the basket ’handles.’ Allow to cook 5-8 minutes.

Use the stick to retrieve basket. Carefully open, content will be cooked, but drippy. Place on bread.
