Sustainable Table Recipes: Grilled Flank Steak Wraps with Farmstead Cheese, Avocado, and Market Romaine Leaves

Ingredients:
Grilled Flank Steak Wraps
For the Wraps (makes 6 jumbo wraps):
1 Flank Steak, sustainably raised and humanely slaughtered
1 cup Marinade (see below)
1 Tbs Spice Blend (see below)
1 lb Farmstead Cheese from the Market (Swiss or Cheddar style is great!)
2 Avocados
1 Head Market Romaine Leaves, washed
Salt and Pepper to taste
6 large Tortilla Wraps

Directions:
Take your steak and place into an airtight Ziploc bag, add marinade and spice blend. Close bag and allow to marinade overnight (12 hours max). Preheat grill to high temperature. Take cheese and thinly slice or grate the cheese. Remove the pit from the avocado, remove flesh and slice into ¼’ pieces.

Remove steak from marinade, season meat with salt and pepper. Place onto grill and cook until medium, approximately 6-8 minutes per side. Discard used marinade. Take wraps and lay onto flat surface. Place romaine leaves into the center (about 2 per wrap). Top with grated or sliced cheese, then avocado. Thinly slice the flank steak and lay on top of avocado slices (and additional cheese if you’d like). Wrap up the mix like a burrito, being sure the ends are secure. Place back onto grill to heat the wrap and allow cheese to melt (about 5 minutes on the grill should do it). Remove and serve.

Other Options:
1 Tbs Paprika
2 Tbs Instant Espresso Powder
¼ tsp Cayenne Pepper
¼ cup Brown Sugar

Combine all of your spices and mix well. Keep in an airtight container or a baggy for traveling.

Marinades are also good to have for gourmet road-tripping, and they are easy to make.

1 c Lime or Lemon Juice
1 tsp Mustard Seeds
1 c Olive Oil
12 Garlic Cloves, sliced
2 bunches Cilantro or Mint (or both), chopped
4 Shallots sliced

Combine all ingredients and mix well. Place into an airtight container and you are good to go. Keep the marinade in a cooler, as it can spoil if it gets warm.

Tips:
Before You Go on the Road this summer:

It’s always a great idea to travel with blended spices for marinating and dry rubbing. A great mix that I use will be easy for you to prepare before you hit the road.
